Peach AF was fermented with our mixed culture of wild-harvested yeast, brettanomyces and souring bacteria. It was also directly fermented in oak using Nigerian rum barrels with peaches added during primary fermentation. After the beer was given time to sour in the barrels it was transferred to stainless and refermented with additional peaches. We recommend drinking this ale fresh.
